From the Coffee Farmer, the Green Coffee Buyer to the Roaster, Specialty coffee can consistently exist through the dedication of the people who have made it their life's work to continually make quality their highest priority. This is not the work of only one person in the lifecycle of a coffee bean; specialty can only occur when all of those involved in the coffee value chain work in harmony and maintain a keen focus on standards and excellence from start to finish. This is no easy accomplishment, and yet because of these dedicated professionals, there are numerous specialty coffees available right now, across the globe, and likely right around the corner from you.

 

THE GREEN COFFEE BUYER

Our partnered Green Coffee Buyer who are Licensed Q Grader have palates as distinguished as a sommelier and can keenly identify coffee quality via cupping, or systematic tasting of brewed coffees. Through cupping, the coffee taster can assess a coffee's score and determine whether it is specialty grade quality, make decisions on which coffees they will include in their offerings, and often develop tasting notes and descriptions for the coffee on its final packaging.

CREMA IS THE PERFECT CANVAS

Some coffees are like glossy magazines (nice to look at but with no real substance). Our Baristas are trained in the art of dribble tests, buttonholes and tiger stripes. This ensures our espresso is rich, robust and full of flavor, ready for expertly stretched organic milk. 

 

BRILLIANT BARISTAS

Milk and sugar. Sugar and milk? It’s easy to switch to coffee autopilot. But if you feel like something new, our Baristas can do all sorts of wonderful things. Extra hot, additional shot, naked or with sprinkles, long or short – ask the Barista to make it your way. They approve every cup (and this message)

NOT TOO MUCH, NOT TOO LITTLE

Intense pressure for espresso and lightly pulsing for drip, it’s essential that filtered water flows through our coffee evenly to extract the full flavor. Like pebbles on a beach (rather than blocks in a wall), the perfect grind has to be a little bit rough around the edges.

 

SWEET & ZESTY NOTES

Brilliantly composed coffee is about hitting all the right notes, all the time. Luckily our coffee guru, is fanatical about consistency. She tweaks and fine-tunes the balance of our blend throughout the year to compensate for natural variances in the beans. Each change is miniscule and undetectable (but that’s the point).
